Three Ingredient Scallion Potato Fritters Recipe
This is 3 Ingredient delicious potato fritters - crispy on the outside and moist and juicy on the inside and is wonderful comfort food that you can make in 10 minutes for the whole family to enjoy. No flour involved. I love to serve it with a dollop of sour cream or homemade Chipotle sauce. Yum!
(You can call them potato pancakes too.)
2 large potatoes (or 3 medium potatoes)
1 bunch of green onions, finely chopped (about 1 cup)
1 egg
Salt and pepper to taste
2 TBS Vegetable oil ( I used Olive oil or avocado oil)

Preheat the pan over a medium heat
Add a tablespoon of vegetable oil
Peel and shred the potatoes using a food grater. I use the Braun food processor to shred the potatoes in 30 seconds. Very quick and convenient.
Squeeze the moisture out of the shredded potatoes using the cheesecloth. I love using this handy cheesecloth. I rinse the shredded potatoes from starch in it too.
In a separate bowl crack the egg and whisk it with finely chopped green onions.
Mix together with shredded potatoes until well combined.
Add 3-4 rounds of the mixture to the pan and press into a pancake shape with the help of spatulas. This OXO high-quality Silicone spatula is excellent for flipping pancakes and fritters.
Fry 3 minutes per side. Or until it is cooked through and the skin is golden brown and crispy.

Notes
Note: If you find that the potato mixture is difficult to keep in place on a frying pan, I found this useful pancake mold tool that keeps the potato mixture in place and makes the potato fritters perfectly round.
