Air Fryer Potato Fritters with Bacon and Green Onions

Air fryer potato fritters recipe is an amazing way to enjoy delicious potato pancakes without babysitting the stove and spending forever in the kitchen. These air-fried potato cakes were inspired by my recent pan-fried 3-Ingredient Potato Fritters, which became popular and loved.

These air fryer potato fritters have become a favorite in our house. Made with shredded potatoes, bacon, cheese, and a handful of green onions, I love how they get crispy on the outside and fluffy in the middle. I love that I can customize this recipe with any combination of vegetables, meat, and other herbs and spices. I’m obsessed with making fritters in the air fryer. Some of my other favorites are Sweet Potato Fritters, Zucchini Fritters, and Cabbage Fritters.

Ingredients

  • 2 large potatoes, shredded
  • ¾ cup green onions, finely chopped (150g)
  • 1 egg
  • 1 Tablespoon all-purpose flour
  • Salt and pepper to taste
  • ½ teaspoon garlic powder
  • 1 Tablespoon oil (I use avocado oil or extra virgin olive oil) for brushing the fritters or oil spray for spraying them
  • 2 Tablespoon bacon crumbles (or 2-3 pieces of cooked bacon, chopped) 
  • Sour cream for garnish and dipping
  • Fresh dill or fresh parsley, chopped, for garnish.

Directions

  1. Peel and shred the potatoes. I use my Hamilton mini food processor to shred potatoes. 
  2. Rinse the shredded potatoes under cold water until the water runs clear. This helps to rid of the starch. 
  3. Pat dry the potatoes and squeeze the water out. I find this cheesecloth bag helps to keep the shredded potatoes in place when rinsing them then squeeze them out to remove the water and moisture.
  4. In a separate bowl crack the egg and whisk it with green onions.
  5. Mix together with shredded potatoes. Add salt, peppers, spices, flour, and bacon, and mix until well combined.
  6. Preheat air fryer to 400°F (200C)
  7. While it's preheating, line the air fryer basket or tray with Air Fryer parchment paper.
  8. Add rounds of the potato mixture to the air-fryer lined basket and gently press and form into a pancake shape with the help of a spoon or a spatula. I use this OXO Silicone spatula. I love it for flipping fritters and turning them on the other side.
  9. Lightly spritz each potato fritter with spray oil.
  10. Cook on Air fry mode at 400F/200C for 7-8 minutes flipping once halfway. Or until it is cooked through and the skin is golden brown and crispy.
  11. Serve with a dollop of sour cream on top or try with homemade chipotle sauce. Garnish with fresh dill or parsley. Bon Appetit!

Tips for the Best Fritters

  • Be sure to squeeze the shredded potatoes to get rid of extra moisture. 
  • To ensure even cooking, shape the potato fritters into even rounds, approx. ½ inch to ¾ of an inch in thickness. 
  • Turn the fritters on the other side halfway through cooking and lightly spray each cake once more with oil spray. Or brush with oil.
  • Preheat the air fryer for a few minutes before adding the potato fritters. This helps to form a nice crispy crust and appetizing caramelized edges.
  • Do not overcrowd the basket. Please give each fritter some space in between so the hot air can fully circulate.
  • Cook until golden and crispy on both sides, flipping once.

Can I Make Potato Fritters with Mashed Potatoes Instead of Shredded?

Yes! Potato Fritters turn into crispy-delish Air Fryer Mashed Potato Cakes. This is one of my favorite ways to use up the leftover mashed potatoes. They are great for parties, they freeze well, and a perfect to make ahead of time.

Topping Variations for Potato Fritters

There are countless variations of this classic potato fritter snack from adding meats and cheeses to using various spices and flavorings.

Combine sweet and savory ingredients such as crumbled bacon, cheddar and chives – these ingredients together will give the fritters wonderful complexity. 

For an extra kick, sprinkle some chili powder over the top. 

For something sweeter, add nutmeg, cinnamon or brown sugar to your potato fritters. 

Enjoy your fresh potato fritters simply with ketchup or combine them with Air Fryer Poached Eggs for breakfast hash.

How to Enjoy Leftovers

Store the leftover potato fritters in the refrigerator in an air-tight container or zippered bag.

Reheat them in the air fryer 2 mins per side at 350F (175C) to bring the outer crisp back

Surprise! You can freeze them. Yay! Store cooked fritters in the freezer for up to one month. Make sure they are separated. I like a small piece of parchment paper in between each fritter. This prevents them from sticking to each other. Reheating is a breeze. No need to thaw them. Follow the reheating directions above.

    Being allergic to eggs, what can I use as a binder in place of it?

      “Flax egg” – Mix 1 Tablespoon ground flax seed with 3 Tablespoons hot water. ...
      Chia seed – Use the same as flax seed.
      Oil and water – Combine 1 1/2 tablespoons oil, 1 1/2 tablespoons water, and 1 teaspoon baking powder.

    These didn't come out well, at all!!! I cooked them for 15 minutes and they were still not cooked.
