These Sweet Potato Fritters are a new way to enjoy healthy sweet potatoes outside of your standard sweet potato bake, casserole, or french fry! These crispy sweet potato fritters were inspired by my recent 3-Ingredient Potato Fritters, which became popular and loved.
Sweet Potato Fritters
Made with shredded potatoes, bacon, cheese, and a handful of green onions, the sweet-savory combination of these sweet potato fritters is unforgettable! And I feel that it’s a great way to make vegetables more exciting and kids really enjoy them. I either pan-fry the fritters in a thin layer of oil or make them in the air fryer. I love how they turn out with a crispy exterior and fluffy middle. We enjoy them for breakfast, lunch, or dinner and serve them with a dollop of sour cream on top or homemade Chipotle dipping sauce.
Ingredients
Not only are they quick and easy to make, but you also can customize them with various seasonings, toppings, and dipping sauces. They're the perfect snack for a casual family get-together or even a fancy dinner party.
- 1 large sweet potato, peeled and shredded
- 1 large egg, whisked
- ⅓ cup parmesan cheese, grated (or shredded mozzarella cheese)
- ¼ cup flour (can use almond flour or any gluten-free flour of choice)
- 1 teaspoon brown sugar (optional)
- salt and pepper to taste
- ½ teaspoon onion powder (or garlic powder)
- ½ teaspoon oregano
- 2 tablespoons green onions, finely chopped
- 2 tablespoons cooked bacon crumbles
- Oil of choice. I use Avocado oil.
DIRECTIONS
- Peel and grate the sweet potatoes. I use my Hamilton mini food processor to shred potatoes.
- Rinse the shredded potatoes under cold water until the water runs clear. This helps to get rid of the starch.
- Squeeze the water and moisture out. I find this cheesecloth bag helps me to keep the shredded potatoes in place when I rinse them, then squeeze them out to remove the water and moisture. Or you can pat them dry with paper towels.
- In a separate bowl crack the egg and whisk it with green onions.
- Mix together with shredded potatoes. Add salt, peppers, spices, flour, and bacon, and mix until well combined.
- In a large skillet, heat a thin layer of oil over medium heat.
- Using a spoon, add rounds of the sweet potato mixture to the skillet and press into a pancake/fritter shape with the help of a spatula.
- Cook in the skillet over medium heat for 3-4 minutes per side or until they are golden brown on the outside and cooked through inside.
- Serve with a dollop of sour cream on top, or your favorite dipping sauce. I loved serving mine with homemade Chipotle dipping sauce.
Making Sweet Potato Fritters in the Air Fryer
- Peel and grate the sweet potatoes. I use my Hamilton mini food processor to shred potatoes.
- Rinse the shredded potatoes under cold water until the water runs clear. This helps to get rid of the starch.
- Squeeze the water and moisture out. I find this cheesecloth bag helps me to keep the shredded potatoes in place when I rinse them, then squeeze them out to remove the water and moisture. Or you can pat them dry with paper towels.
- In a separate bowl crack the egg and whisk it with green onions.
- Mix together with shredded potatoes. Add salt, peppers, spices, flour, and bacon, and mix until well combined.
- Preheat your air fryer to 400°F (200°C)
- Line the air fryer basket or tray with Air Fryer parchment paper.
- Add rounds of the mixture to the air fryer tray and press into a pancake shape with the help of a spatula. Lightly spritz them with spray oil or brush with oil.
- My air fryer oven-type style allowed me to cook 6 fritters at a time. Depending on your air fryer size and style you may fit more or less. Cook in batches, if needed.
- Air fry mode at 400F/200C for 3-4 minutes per side flipping halfway. Once turned, give them one more oil spritz. Fry until the fritter is cooked through and the skin is golden brown and crispy.
TIPS FOR THE BEST Sweet Potato FRITTERS
- We need shredded potatoes free from moisture. Be sure to squeeze them well.
- To ensure even cooking, shape the fritters into even rounds, approx. ½ inch to ¾ of an inch in thickness.
- Flip the fritters on the other side halfway through cooking and lightly spray each cake once more with oil spray. Or brush with oil.
- Preheat the air fryer for a few minutes before adding the potato fritters. This helps to form a nice crispy crust and appetizing caramelized edges.
- Cook until golden and crispy on both sides, flipping once.
Variations
Make Sweet Potato Fritters with Mashed Potatoes. Mash your sweet potatoes until no clumps. Next, mix in flour, egg, and spices until combined (as per the recipe card below). Once your mixture is prepared, heat up a skillet with oil and spoon the mixture into the hot skillet. Let each side of the fritter cook until it's golden brown and crispy around the edges. Add some spice. Sweet potatoes are naturally sweet, so adding a little bit of heat can really balance out the flavors. Try adding some cayenne pepper, chili powder, or even just a dash of hot sauce to your batter. You'll be surprised at how much depth of flavor it adds.
Go tropical. Add some chopped pineapple, mango, or papaya to your batter for a touch of sweetness and an island-inspired twist.
Leftovers
Store the leftover sweet potato fritters in an airtight container in the fridge; they will stay fresh for up to five days.
Freez’em! Store cooked fritters in the freezer for up to one month. Make sure they are separated. I like to use a small piece of parchment paper in between each fritter. This prevents them from sticking to each other. Reheating is a breeze. No need to thaw them. Follow the reheating directions below.
Re-heat or re-crisp them in the air fryer 2 mins per side at 350F (175C), or in the microwave until heated through.
