
2 medium zucchini, grated
1/2 teaspoon salt, or to taste
1/4 cup all-purpose flour (substitute Almond flour for keto and low carb version)
1/4 cup grated Parmesan cheese (can sub for shredded mozzarella cheese)
1 large egg
2 Tablespoons fresh dill, finely chopped
2 cloves garlic, minced
Black pepper to taste

1. Grate zucchini using a vegetable grater
2. Put zucchini in the middle of cheesecloth, wrap cheesecloth and squeeze to drain as much moisture as possible. You will be surprised that you can squeeze one full cup of liquid out of two zucchinis.
3. Place zucchini in a bowl, mix in flour, Parmesan cheese, egg, garlic, dill, salt and pepper
4. Refrigerate mixture for 30 minutes (optional)
5. Pre-heat air fryer to 375F / 190C
6. Lightly grease air fryer baking sheet (or basket) with spray oil. Note: If you’re using the air fryer parchment paper, lightly grease the parchment paper.
7. Using your hands, form patties out of zucchini mixture and lay them on the tray, giving them space.
8. Air fry mode at 375F/190C for 7 minutes, flipping them halfway.
9. Remove zucchini fritters and top them with sour cream or dip in this delicious homemade chipotle mayo sauce.

Bake Directions: Preheat oven to 400 degrees. Assemble fritters then place on greased baking sheet. Bake for 7 minutes, flip, and bake another 5 minutes or until they are done and crispy golden brown.
Fry Directions: Add a tablespoon of oil into a pan, and let it get hot. Place fritters in a hot skillet and cook 2-3 minutes on each side or until it is fully cooked.
