These air fryer zucchini chips are a healthier alternative to traditional fried zucchini chips. They are just as crispy and delicious, but without all the oil and calories. Zucchini is a low-carb vegetable, so these chips are perfect for anyone on a keto or low-carb diet. You can enjoy them as a snack or side dish with homemade copycat Chick-Fil-A dipping sauce.
With only 4 ingredients and no breading involved, I love how these easy Roasted Air fryer Zucchini Chips turn out perfectly tender-crisp, beautifully golden with crispy and crusty caramelized edges and brownish spots. They pair well with practically any meal.
Ingredients:
- 2 medium-size zucchini, sliced into ⅛″ thick rounds. About 3 mm.
- 1 tablespoon olive oil
- 1 teaspoon seasoning of choice. I like to use Italian seasoning or Roast Vegetables and Fries Spice blend.
- Salt and pepper to taste
- 2 tablespoon Parmesan cheese, shredded, divided.
Steps to Making Air Fryer Zucchini
Zucchini is a great summer vegetable. It's low in calories and carbs, and it's a good source of vitamins A and C. It's also a versatile vegetable that can be cooked in a variety of ways. One of our favorite ways to cook zucchini is in the air fryer. Here are some tips for making the perfect air fryer zucchini:
- Cut the zucchini into thin slices, about ¼-inch thick.
- Season the zucchini with little oil, salt, pepper, and your favorite herbs or spices. I love using the OXO food brush to evenly coat zucchini with oil and seasoning.
- Spray the air fryer basket with cooking spray. I use the Ghee oil cooking spray.
- Place the seasoned zucchini slices in the basket in a single layer. Give them some space. Do not pile on top of each other. Depending on the size of your air fryer, work in batches. I use Cuisinart Air fryer oven and it comfortably fits 20-24 zucchini slices to air fry.
- Cook at 400F/200C degrees for 5 minutes, then flip each slice and air fry for an additional 3 minutes.
- Enjoy! I serve mine with the side of Homemade Chipotle sauce.
How to prevent Air-fried Zucchini from getting soggy
There are a few things you can do to prevent your air fried zucchini from being soggy. First, make sure to slice the zucchini into thin, even slices. If the slices are too thick, they will take longer to cook and will be more likely to come out soggy. Second, be sure to pat the zucchini dry before cooking it. This will help to remove any excess moisture that could make the zucchini soggy. Finally, cook the zucchini at a high temperature so that it has a chance to get crispy.

Instructions
- Preheat air fryer to 400F/200C
- Toss zucchini slices with olive oil, seasoning, salt & pepper to taste, and 1 tablespoon Parmesan cheese. I love using the OXO food brush to evenly coat zucchini with oil and seasoning.
- Place seasoned zucchini slices directly onto Air fryer tray/basket in a single layer. Give them some space. Do not pile on top of each other. Depending on the size of your air fryer, work in batches. I use Cuisinart Air fryer oven and it comfortably fits 20-24 zucchini slices to air fry.
- Air fry mode 400F/200C for 5 minutes, then flip each slice and air fry for 3 minutes
- Sprinkle over Parmesan cheese and send zucchini back to the air fryer for 2 minutes or until cheese is melted, zucchini slices are caramelized with beautiful brownish spots.
- Enjoy! I serve mine with the side of Homemade Chipotle sauce. Yum!
