My mom has been making the cabbage fritters on repeat, and I absolutely love them. While the fritters are delicious, she pan-fries them in a generous amount of oil. Here’s the original cabbage fritters recipe, please take a look.
I decided to make cabbage fritters in the air fryer. They become a perfect combination of healthy, tasty and crispy: the fritters have healthy cabbage, carrots and a good amount of protein, thanks to the egg and sour cream.
The air fryer cabbage fritters use thinly shredded cabbage and thinly shredded carrots which form nice layers in the fritters, giving them a crunchy texture as you bite into them.
The fritters hold up well and make great finger food for dipping into the delicious creamy garlicky chipotle sauce/dip, which is the perfect pairing for these cabbage fritters.
What’s the Cabbage Fritters taste like?
I love that cabbage adapts the taste of the seasoning that you use. Therefore I love to experiment with different seasonings. Cooked cabbage gets rid of it’s slightly bitter taste and becomes a little sweeter. Cooked in the air fryer, the texture is crunchy and soft on the inside, surrounded by a crispy caramelized crust. A perfect combination of soft and crunchy, in my opinion.
How to make Cabbage Fritters in the Air Fryer?
Begin by shredding the cabbage and carrots. I love to use my Braun Food processor. It allows me to thinly shred the cabbage in less than 20 seconds.
Then add an egg, sour cream, flour, spices, and seasoning; mix everything well.
Using your hands, pick up the small amount of mixture (about 2 tablespoons and roll the mixture into a ball shape. Note, if the mixture starts to get sticky, wet your hands a little bit.
Once the balls are assembled on the air fryer tray or basket, using a spoon, gently press the balls into a pancake shape, approximately ½ inch in thickness.
Spray with oil spray (I use Ghee Oil Spray). Alternatively, you can brush with oil. Air fry 3-4 minutes per side or until golden brown with caramelized edges.
Let them cool for a few minutes. Enjoy warm with your favorite sauce or as a healthy side dish.
Recipe Notes and Variations:
You can use parchment paper to lay the cabbage fritters on. They will be easy to flip and will not stick. Still use oil though to brush on the fritter.
You can substitute for gluten-free flour or almond flour.
You can add any seasoning of your choice.
Add a few fresh herbs. I love to use finely chopped fresh dill and finely chopped green onion.
Add cooked bacon pieces or bacon crumbles, a dollop of sour cream and top with green onions or chives and you have a complete loaded cabbage fritter experience.
Air fryer cabbage fritters are one of the rare recipes when the fritters taste even better the next day or after they sit in the fridge for a while.

Ingredients
- 2 cups raw cabbage, finely shredded
- 1 medium carrot, finely chopped
- 1 egg
- 1 tablespoon sour cream, plus more for serving
- 3 tablespoons all purpose flour
- 1 teaspoon salt or to taste
- ½ teaspoon pepper or to taste
- 1 teaspoon seasoning of choice. I used Mrs. Dash Seasoning blend
- 1 tablespoon Olive oil or preferred vegetable oil (for brushing the fritters)
Instructions
- Preheat Air fryer to 375F/190C
- Remove the top leaves from the cabbage.
- Finely shred the cabbage. I use a Braun food processor for easy cabbage and carrot shredding and chopping
- In a large bowl, combine shredded cabbage, shredded carrot, salt, pepper, seasoning, sour cream, baking soda, egg, and flour. Mix thoroughly.
- If desired, add green onions, garlic and herbs.
- Using your hands, pick up the small amount of mixture (about 2 tablespoons and roll the mixture into a ball shape. Note, if the mixture starts to get sticky, wet your hands a little bit.
- In a single layer assemble the balls in the air fryer basket or tray.
- Using a spoon, gently press the balls into a pancake shape, approximately ½ inch in thickness.
- Lightly spray each fritter with oil spray. Alternatively, you can brush with oil. Air fry 3-4 minutes per side or until golden brown with caramelized edges.
- Let them cool for a few minutes. Enjoy warm or chilled with a dollop of sour cream (about 1 teaspoon) or dip them into delicious garlicky Chipotle sauce.

You can use dairy-free sour cream. A tablespoon of coconut cream. Or simply omit the sour cream.
