Cabbage in any shape or form has always been a part of my diet, but it wasn't until I discovered the magic of the air fryer that I truly fell in love with it. Air fryer cabbage is a game changer. The crispy texture and caramelized edges bring out the sweetness of the cabbage in a way that boiling, steaming, or sauteeing just can't achieve. Air-roasted cabbage is great as a low-calorie low-carb vegetable side dish. I also love it for stuffing Air Fryer Egg Rolls, making cabbage pies, or adding it to Beet and Cabbage soup.
I love how it’s incredibly easy to make this recipe. All you need is some sliced cabbage pieces (also called cabbage steaks or cabbage wedges) and a few spritzes of oil before popping it into the air fryer. I love to season mine with garlic powder, salt and pepper to taste, and sweet or smoky paprika for an added twist.

How to Make Roasted Cabbage Steaks in the Air Fryer
Choose the right Cabbage: Look for a firm, dense head of cabbage that's free from any soft spots or bruises. Green cabbage is the most common cabbage for roasting, but purple cabbage also works well.
Prep the Cabbage: Remove any wilted or damaged outer leaves. Cut off the stem and slice the cabbage into wedges or slices, approximately ½ inch thick to ¾ inch thick. But no more than 1 inch thick. Make sure that the pieces are roughly equal in size to ensure even cooking.
Season: You can use whatever seasoning blend you prefer, but a simple mixture of olive oil, salt, and pepper is always a winner. If you like a little heat, add some cayenne pepper or chili flakes. You can also toss in some minced garlic, onion powder, or smoked paprika for added flavor.
Cook: Set your air fryer to 375°F and preheat it for 3 minutes. Spray the air fryer basket with cooking spray, then arrange the cabbage pieces in a single layer, making sure they're not too close together. Depending on the size and thickness of the cabbage pieces, you'll need to cook for about 10-13 minutes, flipping halfway through. The cabbage should be browned and crispy on the edges.
Why my Cabbage's outer leaves are burnt?
This is perfectly normal. The heat from the air fryer’s fan dries out the outer layers of the cabbage, which results in burnt edges. The same thing can happen when preparing other vegetables in an air fryer, so it’s not just limited to cabbage steaks. The good news, you can still enjoy the cabbage steak without burned outer layer. Simply remove or cut the burned edge with the scissors. It’s that easy! See pic below.
Serve
Once the cabbage is done, remove it from the air fryer basket using a spatula and serve it hot. You can enjoy it as a side dish, a healthy snack, or as a topping for sandwiches or salads. Place the leftover cabbage in an airtight container or sealable plastic bag. It can stay fresh for up to 5 days. Reheat in the air fryer for 4-5 mins to bring back the crispy and crunchy. You can also melt cheese on top for a delicious Cabbage Melt.
