Air Fryer Mushrooms
Sauteed mushrooms are one of my favorite foods. I love the way they cook nicely and evenly in the air fryer and how they get soft inside and crispy around the edges. I add them to everything from salads to topping pizzas and pasta dishes. They freeze well and I always keep a batch in my freezer so I can add them to whatever I'm cooking. My favorite thing about this air fryer sauteed mushrooms recipe is how much flavor you get from them; with only a few ingredients. Air-fried mushrooms need much less oil than pan-sauteed mushrooms. In the air fryer, they caramelize in their natural juices and marinade, so you only need a light coating of oil.
Are Mushrooms Good for You?
Yes! Mushrooms are low in calories and fat, and they are a good source of protein and fiber. I love that they are naturally low in carbs and a good source of antioxidants. Sauteing mushrooms in the air fryer is a good option as it helps to retain their nutrients.
Ingredients
- Mushrooms, sliced. This recipe works great with white button mushrooms, Portobello mushrooms, Shiitake or Oyster mushrooms
- Olive oil - this allows for better browning
- Soy sauce - adds flavor and deeper brown color
- Salt & pepper to taste
- Fresh minced garlic
- Grated Parmesan Cheese - a sprinkle of
- Herbs - Parsley or Rosemary go amazing with mushrooms
How to Sautee Mushrooms in the Air Fryer
- Slice button mushrooms in halves (or thirds). Store-bought pre-sliced mushrooms will work too.
- Place mushrooms in the mixing bowl and coat with oil and soy sauce. Let them marinate in the mixture for 5 minutes. Do not let the mushrooms sit in the soy sauce mixture for too long. Mushrooms can easily absorb the soy sauce and may turn out too salty. This is just not to my taste.
- Preheat the air fryer to 400 degrees F (200 degrees C) for 3 minutes.
- Place mushrooms in a single layer onto the air fryer tray or basket right after you coat them with olive oil and soy sauce
- Air fry mode (air crisp) at 400F (200C) for 8 minutes.
- Flip or shake halfway
- Now, your mushrooms are ready. Place them onto the serving plate. Add chopped garlic, pepper, and chopped parsley. Mix well and enjoy!
- Sprinkle on some Parmesan cheese, if desired. Parmesan cheese adds a rich, savory taste to these mushrooms.
What to Serve Mushrooms with?
- Vegetables: Air-fried mushrooms go great with vegetables such as carrots, green beans, and broccoli.
- Rice: Try pairing them with brown rice or quinoa for a healthy and filling meal.

How to Store Sauteed Mushrooms?
Mushrooms can be stored in an airtight container in the refrigerator for up to 4 days.
Store sauteed mushrooms in the freezer in the zip-lock bag for up to 3 months. Add to your soups and stews straight from frozen.
To reheat, place mushrooms in the preheated air fryer at 380 degrees Fahrenheit for 2 minutes, or until heated through.
Do Air-fried Mushrooms Shrink?
Smaller mushrooms, like shiitake, may shrink more than larger mushrooms, like portobello. And mushrooms with a higher water content will shrink more than mushrooms with lower water content.
That said, all mushrooms will lose some moisture when they're cooked, so they will all shrink to some extent. However, air-fried mushrooms will shrink less than mushrooms that are cooked in oil, because the air-frying process doesn't add any additional moisture.
Tips for the best Air-fried Mushrooms
- To ensure even cooking, cut the mushrooms into equal slices
Preheat the air fryer for 5 minutes before adding the mushrooms. This helps to form a nice crispy crust and appetizing caramelized edges. If your air fryer does not have a preheat function, simply run it empty for 5 min. - Place the mushrooms directly onto the Air fryer basket or tray (not on parchment paper or aluminum foil).
- Don’t overcrowd your mushrooms in the basket and give hot air a chance to circulate thru the mushrooms or else they may take longer to cook or may not cook evenly.
- Do not cut them too thin - mushrooms will shrink during cooking. The thinner pieces may dry out or burn faster.
Air Fryer Mushrooms with Garlic and Parsley

Air fryer mushrooms will complete any meal with just 5 minutes of prep time and less than 10 minutes of cooking time.
Ingredients
- 8 oz whole baby Bella mushrooms, sliced in halves. This recipe will work great with most standard mushrooms of your choice. White button mushrooms, Portobello mushrooms, Shiitake mushrooms
- 1 Tablespoon olive oil or Avocado oil
- 1 Tablespoon soy sauce
- ¼ teaspoon freshly ground pepper
- 1 garlic clove, finely chopped or minced
- 1 Tablespoon Grated Parmesan Cheese
- 1 Tablespoon fresh parsley, finely chopped; or green onion
