We tried Pepperoni Grilled cheese, Pesto melt, and Cheesy Onion toastie. The onion melt was such a hit, even with kids! So I decided to add even more flavor and bring caramelized mushrooms and onions to our beloved grilled cheese.

Make Air Fryer Mushroom Grilled Cheese
Preheat your air fryer to 375 degrees Fahrenheit (190 °C)
Assemble – While it is preheating, begin assembling your sandwich by spreading butter on one side of each slice of bread
Add cheeses and mushrooms – Add a layer of provolone or mozzarella cheese slices to one piece of bread, followed by a layer of mushrooms and onions. Top with another layer of Cheddar cheese slice and then the other slice of bread, spread side down.

Tips for the Ultimate Air Fryer Grilled Cheese
Grilled cheese is one of the most classic comfort foods out there. And while it may seem like a simple dish, there are actually quite a few ways to mix things up and make a delicious grilled cheese that's all your own.
Start with good bread. Great grilled cheese starts with great bread. Make sure to choose a loaf that's fresh, dense, and not too thick or too thin. Brioche, sourdough, and ciabatta are all excellent choices. Experiment until you find a bread that you love. I personally prefer sourdough.
Think beyond American cheese. American cheese may be the most popular choice for grilled cheese, but it's far from the only option. Try out some other cheeses like Havarti, Swiss, Provolone, or Brie. You can even use two different types of cheese for a more complex flavor profile.
Get creative with your fillings. In addition to different types of cheese, there are also endless possibilities when it comes to what you can put inside your grilled cheese sandwich. Sliced fruit, bacon, avocado, ham, and roasted vegetables are all great options. Just make sure not to overdo it—you don't want your fillings to overpower the taste of the cheese itself.
Spice things up with some condiments. Once you've got your perfect combination of bread and fillings, it's time to think about condiments. A little bit of mustard or ketchup can go a long way in adding some extra flavor to your sandwich. Or you could try something more adventurous like horseradish or homemade Chipotle sauce for a bit of a kick.
Prep your air fryer before cooking. To get that perfect golden brown color on your bread, it's important to preheat your air fryer before adding the buttered sandwich - this will help prevent the fat from burning before the bread has a chance to cook through properly.
You can even put the grilled sandwich on a piece of air fryer parchment paper for an ultimate no-mess grilled cheese experience. Then cook 3 minutes per side until the bread is nice and crispy and the cheese is melted and bubbly.
There are lots of different ways you can make a delicious grilled cheese sandwich—it all comes down to personal preference. So experiment with different types of bread, cheeses, and fillings until you find a combination that you love best!
And don't forget the condiments—they can really take your sandwich over the top!
