Last week I was making air-fried lamb chops. However, it was looking a bit bland without any veggies around it. So, I decided to roast mushrooms and broccoli as a side dish. They turned super delicious when served with lamb chops. Therefore, I thought let's share it with you so that you can also enjoy this amazing side dish with your favorite meal.

Ingredients for air fryer mushrooms and broccoli
- Broccoli
- Mushrooms
- Salt
- Pepper
- Seasoning: Garlic powder, onion powder, mushroom seasoning, Italian seasoning, olive oil, or vegetable oil.

You can use the seasoning of your choice. But don't add lots of spices because more spices can turn down the flavor of veggies.
How to cook Mushrooms and Broccoli in an Air Fryer
- Time to preheat: Preheat the air fryer at 390F/190C for 5 minutes.
- Now place the seasoned veggies into the tray and give them some space. Don't overlap them. I'm using Ninja Air Fryer Grill XL which has a large basket.
- Air fry the veggies for 10 minutes.
- Flip after 5 minutes. (Flip them with the help of kitchen tongs).
- You can put both veggies together at the same time but make sure you don't overlap them. As you can see in the picture, I even cooked red peppers with broccoli and mushrooms, all together.
- If you have more veggies, cook them in batches.
How to store the leftover mushrooms and broccoli?
Store leftover roasted mushrooms and broccoli in an air-tight container. You can also pack them in the zip lock bag and store them in the refrigerator for 3-4 days.
Can I oven-roast broccoli and mushrooms?
Absolutely! It may take some extra time to cook. For the oven, you will have different temperatures and timings.
Preheat the oven to 400F/200C, and line the baking sheet with parchment paper or aluminum foil.
Toss broccoli and mushrooms with olive oil, garlic powder, salt and pepper. Put the mixture on the baking sheet.
Bake for 15-20 minutes or until the vegetables are tender and browned.
Can I use another seasoning for this recipe?
Yes, you can use any seasoning of your choice for this recipe. Let me share some other seasonings that will suit better for this side dish.
- Salt, pepper, garlic powder, and oregano
- Salt, black pepper, thyme, and a few drops of lemon.
- You can only salt to season the vegetables.

- 2 cups bella mushrooms, sliced in halves or thirds
- Season separately. Salt+ pepper to taste. Use seasoning of choice. I used garlic powder, onion powder, mushroom seasoning and all-purpose seasoning (or italian seasoning).
- 2 Tablespoons Olive oil (or vegetable oil of choice)
Instructions
