Air Fryer roasted sweet peppers are super easy to make. For this recipe, I used mini sweet peppers. They come out delicious with a bit of sweet taste. I love sweet peppers because they are healthy, low carb, and keto-friendly. I love to add roasted peppers to my salads, and pizza; they are a great side to any meat dishes or festive decoration to the holiday table.
Look how gorgeous they are! Beautifully caramelized with wrinkly skin and crispy edges! They are like candy. I can eat Yum!
It takes only a few simple ingredients for Air Fryer sweet peppers:
- 8 sweet mini peppers
- 2 Tablespoons olive oil or avocado oil
- ½ teaspoon salt
- ¼ teaspoon pepper
- ½ teaspoon seasoning of choice. I used veggie and fries spice blend seasoning.
- Balsamic glaze (optional)

Directions:
Cut each pepper in half, length-wise
Scoop out the seeds
You can cut off the stems, but I kept them for their beautiful look, plus I could hold on to the stem when picking a pepper
In a large mixing bowl toss peppers with oil and seasoning. I use my OXO food basting brush for easy coating on each pepper. Works great!
Place peppers onto the air fryer basket or tray (one side up for all for an even cooking and caramelizing)
Air fry at 400F (200C) for 12 minutes, flipping each pepper halfway.
Serve. Sprinkle over some freshly chopped parsley and add a bit of Balsamic glaze on top if desired
