Air Fryer roasted sweet peppers are super easy to make. For this recipe I used mini sweet peppers. They are delicious with a bit of sweet taste, healthy, great on pizza, salads and a festive decoration to the holiday table.
Look how gorgeous they are! Beautifully caramelized with the wrinkly skin and crispy edges! They are like candy. Yum!

It takes only few simple ingredients for Air Fryer sweet peppers:
8 Sweet mini peppers
2 Tablespoons olive oil or avocado oil
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 tsp veggie seasoning blend.
Balsamic glaze (optional)
Air Fryer roasted sweet peppers are low carb and keto friendly!

Directions:
Cut each pepper in half, length-wise
Scoop out the seeds
You can cut off the stems, but I kept them for their beautiful look, plus I could hold on to the stem when picking a pepper
In a large mixing bowl toss peppers with oil and seasoning. I use this food silicone brush for easy coating on each pepper. Works great!
Place peppers onto the air fryer basket or tray (one side up for all for even caramelizing)
Air fry at 400F (200C) for 12 minutes, flipping once half-way.
Add a bit of Balsamic glaze on top if desired
Enjoy!
