I enjoy air fryer roasted parsnip by itself, just dipping in homemade Chipotle sauce. However, roasted parsnip fries can be a great option for a light side dish. During baking, I only used a little salt, garlic, and seasoning, but before serving you can add absolutely any spices, aromatic herbs, fresh herbs.
Ingredients:
1 pound parsnips (3 medium pieces, see picture)
1 tablespoon vegetable oil. I use extra virgin olive oil or avocado oil
½ teaspoon salt
½ teaspoon garlic powder
½ teaspoon seasoning of choice. I use Vegetables and Fries spice blend.
2 teaspoons fresh chopped parsley (optional for garnish)
Directions:
Wash and peel parsnips. Cut them into the shape you like. I cut them into french fry shape sticks
Place parsnips in a bowl and coat them with oil and seasoning, salt, and garlic powder. I love to use this OXO basting and a pastry brush to ensure each piece is well coated with oil and seasoning.
Pre-heat air fryer. Let it run empty for a minute or two.
Lightly grease air fryer basket or tray with spray oil.
Arrange the parsnip slices on the air fryer tray. Give them some space so they do not overlap.
Air fry mode at 400F (200C) for 6 minutes.
Open the air fryer, flip each parsnip slice on the other side, and air fry for an additional 3-5 minutes or until golden brownish with caramelized crispy edges.
Taste and lightly salt if desired and season with fresh parsley.
