These almond flour sugar cookies are sweetened with golden monk fruit instead of sugar. Six ingredients, one bowl, no rolling pin—just scoop, flatten slightly, and bake at 350°F for about 15 minutes.

These cookies are especially handy when you want an easy homemade cookie without pulling half the pantry onto the counter. They bake up soft in the center with lightly crisp edges and just enough sweetness. The recipe uses almond flour, coconut oil, golden monk fruit, an egg, vanilla, and a pinch of salt, and you can keep them simple or add chocolate chips, chopped pecans, or dried cranberries.

Ingredients
- Almond flour — the base of the whole cookie; gives them a tender, buttery crumb with no wheat flour
- Coconut oil — holds the dough together in place of butter
- Lakanto Golden monk fruit sweetener — the golden monk fruit sweetener I actually baked these with; it measures like sugar
- Egg — binds the dough
- Vanilla extract — flavor
- Pinch of salt — sharpens the sweetness
- Optional add-ins — chocolate chips, chopped pecans, dried cranberries, or your own favorites
Instructions
- Heat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, stir together the almond flour, monk fruit sweetener, and salt.
- Add the coconut oil, egg, and vanilla, and mix until a soft dough forms. Fold in any add-ins now if you’re using them.
- Scoop the dough, roll into balls, and flatten them slightly on the baking sheet — they won’t spread much on their own.
- Bake for about 15 minutes, until the edges are lightly golden.
- Let them cool on the pan — they’re delicate while hot and firm up as they cool.

Tips
- Flatten the scoops before baking — these don’t spread on their own.
- Let them cool on the pan; they’re fragile while hot.
- Keep add-ins to about 1/2 cup total so the dough still holds together. If you like easy cookie recipes, try my Air Fryer Peanut Butter Cookies too.
- Store in an airtight container at room temperature up to 3 days, or refrigerate up to a week.
FAQ
Are these sugar-free?
As written with monk fruit sweetener, yes. If you add chocolate chips or dried fruit, those add sugar.
Are they low-carb?
They’re lower in carbs than traditional sugar cookies thanks to the almond flour and monk fruit. Exact numbers are in the recipe card below.
Can I use regular sugar instead of monk fruit?
Yes, it swaps 1:1, but the cookies won’t be sugar-free anymore.
Can I make them without the egg?
I haven’t tested an egg substitute in this recipe, so I can’t promise the same result.
