I wanted these peanut butter cookies to keep keto-friendly and dog friendly so I only used 2 ingredients. Peanut butter and an egg. Well to be completely honest, I have added 1 tablespoon of Semolina, as an optional ingredient.
Ingredients: This recipe makes approximately 12 peanut butter cookies.
¾ cup Peanut butter, any kind. Creamy or crunchy.
1 large egg
Optional Ingredients:
1 TBS semolina. I like to add semolina flour for a bit of extra crunch
Sugar. Feel free to add sugar or granulated sweetener of your choice. To me, peanut butter already tastes sweet.
Salt to taste.
1. In a medium bowl mix peanut butter and egg until well combined and looks like cookie dough.
2. Roll about one inch of cookie dough into a ball. See pictures.
3. Using a fork, flatten a ball into a cookie shape and leave the fork marks.
4. Place cookies onto air fryer basket or onto air fryer tray.
5. Line the tray with Air fryer parchment paper if desired. I find it easier to use, and to flip the cookie with less mess
6. Preheat the air fryer at 350F/176C for 2 minutes
7. Airfry mode at 350F/175C and bake the cookies for 6 minutes, flipping halfway. 3 minutes per side.
8. Remove cookies from the air fryer and let them rest until completely cool.
9. Add a dollop of jelly to the top and you are instantly in peanut butter jelly heaven without the bread
