Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut oil
  • 1/2 cup Lakanto Golden monk fruit sweetener
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  • Heat the oven to 350°F and line a baking sheet with parchment paper.
  • In a large bowl, stir together the almond flour, monk fruit sweetener, and salt.
  • Add the coconut oil, egg, and vanilla, and mix until a soft dough forms. Fold in any add-ins now if you're using them.
  • Scoop the dough, roll into balls, and flatten them slightly on the baking sheet — they won't spread much on their own.
  • Bake for about 15 minutes, until the edges are lightly golden.
  • Let them cool on the pan — they're delicate while hot and firm up as they cool.

Notes

Optional add-ins: chocolate chips, chopped pecans, or dried cranberries — keep to about 1/2 cup total so the dough still holds together. Note: chocolate chips and dried cranberries add sugar. Store in an airtight container at room temperature up to 3 days, or refrigerate up to a week.
