This air fryer tuna melt recipe is my go-to when I want something fast, comforting, and high in protein without feeling heavy. It uses simple pantry ingredients — canned tuna, mayo, crunchy celery, onion, good bread, and cheese — but the air fryer turns it into something that tastes way more impressive for a 10-minute lunch.

This open-faced air fryer tuna melt cooks differently than a stovetop version, and that’s the advantage. The air flow hits the top and edges directly, melting the cheese evenly while the bread crisps underneath. When you layer it correctly (yes, layering matters), you get contrast: crispy base, creamy center, juicy tomato, and blistered cheese on top. It’s fast, high-protein, and honestly better than most diner versions.

Ingredients You’ll Need

  • 1 can tuna, drained extremely well
  • 2–3 tbsp mayo
  • 1 tbsp finely diced celery
  • 1 tbsp finely diced red onion
  • Salt & pepper
  • 2 slices sturdy sourdough
  • 1–2 slices cheese (cheddar, provolone, Swiss)
  • 2 thin tomato slices (patted dry)

Tip: Tomatoes release moisture quickly in an air fryer. If you don’t pat them dry, steam forms under the cheese and softens the tuna layer. Also: Don’t overload the tuna. Keep it about ½ inch thick. Too thick = warm top, cool center.

How to Make Open-Faced Air Fryer Tuna Melt

Step 1: Pre-Toast the Bread (Critical Step)

Air fry bread alone for 1–2 minutes at 370°F.
This creates a moisture barrier so the tuna doesn’t soak in.

Step 2: Mix Tuna Properly

Step 3: Layer in the Correct Order

Bread → Tuna → Tomato → Cheese

Cheese goes on top so it seals the tomato and tuna, reducing evaporation and drying.

Step 4: Air Fry

370°F for 4–6 minutes until cheese bubbles and edges turn golden.

If you want golden blistered spots, increase to 380°F for the last minute.

Air Fryer Insight

Air fryers dry food from the top down.
That means:

  • Too little mayo = dry tuna
  • Too much mayo = greasy bread

Balance matters more here than in a skillet.

Also, don’t overcrowd the basket. The open-faced design needs airflow around the edges to crisp properly.

Healthier:  Swap half the mayo for Greek yogurt.

Spicy Version:  Add chopped jalapeños or a little sriracha to the tuna mix.

Extra Crispy: Lightly spray just the outer crust of the bread with olive oil before pre-toasting. You’ll get bakery-style crunch.

  • Drain the tuna thoroughly. Press it firmly against the lid to remove excess liquid. Too much moisture can make the bread soft in the air fryer.

  2. Excellent with about 1/2 cup of precooked French cut string beans mixed in with tuna salad at step#1. Be sure to pat beans dry with paper toweling before adding.
