Butternut squash. Peeled, de-seeded, and cut into a french-fry shape (or chunky cubes).
2 Tablespoons Olive oil (avocado oil) or spray oil
Seasoning: ½ teaspoon cinnamon
½ teaspoon mixed herb seasoning. I use the Organic Veggie blend to season my butternut squash and Roast Vegetables and Fries Spice Blend.
Avocado oil spray.
1 Tablespoon Fresh chopped parsley (optional)
Balsamic Glaze (Optional). Or you can make your own homemade Balsamic Glaze (Balsamic reduction) in 20 minutes.
Place the butternut squash pieces into a large bowl and cover with cold water. Let it sit in cold water for 20-30 minutes. This step is optional and may eliminate excess starch since butternut squash is a slightly starchy fruit. I call it fruit because it has seeds. But it might be a vegetable.
Drain and pat dry
Place butternut squash in a bowl and coat them with oil and seasoning. Using a food silicone brush, toss and brush squash fries until well coated.
Lightly grease the air fryer basket or tray with spray oil
Arrange the squash slices in the air fryer cooking basket or tray. Give them some space so they do not overlap
Air fry mode at 400F (200C) for 7 minutes
Open the air fryer, flip each squash piece (or give them a “shake”), and air fry for another 4-5 minutes or until golden brown and caramelized crispy edges.
Taste and Lightly salt if desired and season with fresh parsley and Balsamic Glaze.
