I LOVE this delicious twist on a classic Caprese Salad which is usually made with tomatoes. Of course I love my tomatoes too, but not until July - August, when they're falling off my tomato plants. 🙂
This is so easy to make, no cooking required. All you need is to slice the ingredients and toss them together.
Watermelon & Pearls of Mozzarella salad ingredients
1 cup seedless watermelon, diced in small cubes
1 cup Fire Roasted peppers, sliced in small cubes
1,5 cups Fresh Mozzarella pearls (Found at local supermarket. Comes in few sizes. I got the smallest pearls. If you can't find pearls, then you can get a regular fresh mozzarella and dice it in small cubes)
1 cup Fresh Arugula
1 tablespoon Balsamic glaze (Found in local supermarket, just be sure to check for nasty chemicals they put in Balsamic glaze or buy Organic) or you can easily make your own in about 20 minutes. Make a larger batch and store in your cupboard or refrigerator to use for salads like this.

Toss all ingredients together and enjoy immediately. Can be refrigerated and made ahead. It tastes the same awesome the second day. Tested!

Oh, this looks so delicious!! I've never heard of pearls of mozzarella. This would be perfect for a summer dinner.
