Ingredients

You only need a few simple ingredients: Full measurements are in the recipe card below. 

Fresh cilantro

Use fresh cilantro leaves and tender stems. The stems have lots of flavor, so don’t stress about picking every single leaf like you’re doing surgery.

Sour cream or Greek yogurt

Sour cream gives it a rich, creamy taste. Greek yogurt makes it lighter and adds a little extra tang. Either one works.

Mayonnaise

A small amount of mayo makes the sauce extra smooth and creamy. You can skip it if you want it lighter, but it does give that restaurant-style texture.

Fresh lime juice

Fresh lime juice makes the sauce bright and zesty. Bottled lime juice works in an emergency, but fresh is much better here.

Garlic

One small garlic clove is enough. Raw garlic is powerful. It does not come to play.

Salt

Salt brings everything together.

Optional jalapeño

Add a little jalapeño if you want heat. Remove the seeds for mild spice or leave some in if you like it spicy.

Optional honey

Just a tiny drizzle balances the lime and garlic. It will not make the sauce sweet, just smoother.

Instructions

  • Rinse the cilantro well under cold water and shake off excess moisture. If it’s very wet, lightly pat it dry so it doesn’t water down the sauce.
  • Add sour cream (or Greek yogurt), mayonnaise, lime juice, garlic, salt, and water to a blender or food processor.
  • Add the cilantro— including the leaves and tender upper stems. No need to remove every stem, just avoid the thick bottom parts. 
  • Add jalapeño and honey if using. Jalapeño seeds removed for mild heat or left in for more spice. Start with half and adjust to taste.
  • Blend until smooth and creamy, 1-2 minutes.
  • Taste and adjust. Add more lime juice for tang, more salt for flavor, more water to thin it out, or more cilantro if you want it extra herby.

If it looks too thick or the blender is struggling, add a little water and blend again. Scrape down the sides if needed and give it another quick blend until it’s smooth enough for your liking.

This texture works especially well if you’re planning to drizzle it over something like Air Fryer Salmon Bites or roasted vegetables.

Serve right away or chill for 15–30 minutes for even better flavor.

Tips (That Actually Make a Difference)

Use just enough liquid to “unlock” the blender
If the sauce is too thick, the blades won’t fully break down the cilantro, which is why you get little green bits. Add 1 tablespoon of water at a time until it moves freely — that’s the difference between chunky and smooth.

Blend in two rounds for a smoother texture
Blend once, scrape down the sides, then blend again. That second blend is what takes it from “good” to actually smooth like the restaurant version.

If it looks pale, it’s not a fail — it’s a ratio issue
Too much dairy = lighter color. Add a small handful of cilantro and a squeeze of lime, blend again, and the color deepens right away. Also, adding jalapeno makes it “greener”.

Don’t overdo the garlic at first
Raw garlic gets stronger as it sits. Start with one clove, then adjust later if needed.

For that glossy, restaurant-style finish
Add a tiny drizzle of neutral oil (like 1–2 teaspoons) at the end and blend briefly. It smooths out the texture and gives it that slightly shiny look.

If you want ultra-smooth (like Chipotle level)
Blend longer than you think — 30–60 seconds more — or use a higher-speed blender. Most people just under-blend.

These small tweaks are what take it from homemade (which is still great) to “wait, this actually looks and tastes legit.”

Variations & Substitutions

This cilantro lime sauce is easy to adjust depending on what you have or what you’re in the mood for. For a little heat, add jalapeño or a pinch of cayenne. If you want it thicker and creamier, blend in half an avocado— similar to my creamy avocado cilantro sauce. To turn it into more of a dressing, just add a bit more water or lime juice until it’s pourable.

You can also lighten it up by using Greek yogurt instead of sour cream and mayo. If you don’t want mayo at all, just use all sour cream or yogurt — it will still be creamy and flavorful. For a dairy-free version, use a plant-based yogurt or go with a simple blend of cilantro, lime, garlic, and avocado.

For a more restaurant-style flavor, add a pinch of cumin, chili powder, or Mexican oregano. It adds a subtle depth without overpowering the fresh cilantro and lime.

What to Serve With Cilantro Lime Sauce

This sauce works with tacos, bowls, chicken, shrimp, salmon, vegetables, and potatoes.

Can I make cilantro lime sauce without mayo?

Yes. Use all sour cream or all Greek yogurt instead. Mayo makes it creamier, but it is not required.

Is cilantro lime sauce spicy?

Not unless you add jalapeño. Without jalapeño, it tastes creamy, tangy, fresh, and mild.

Can I use bottled lime juice?

You can, but fresh lime juice tastes much better in this recipe.

Can I make it ahead of time?

Yes. You can make it a few hours ahead or the day before. The flavor gets even better after chilling.

Why is my sauce separating in the fridge?

Why isn’t my cilantro lime sauce as smooth and bright green as the one from restaurants?


That usually comes down to blending and ratio. If the texture looks a little rough, it means the cilantro didn’t fully break down — most often because the mixture is too thick for the blades to move properly. Add a small splash of water and blend longer, scraping the sides once, and it smooths out.

Can I make this without a blender at all?

Yes, but it will be more rustic. Finely chop the cilantro and garlic, then whisk everything together. It won’t be perfectly smooth, but the flavor is still there — just more texture. You can also use an immersion blender in a jar, or mash everything with a mortar and pestle first, then stir in the creamy ingredients.

For the color, restaurant versions tend to use more herbs and a thinner base, so they look brighter. If yours looks lighter, just add a bit more cilantro and a squeeze of lime, then blend again. It deepens the color fast — no mystery, just balance.
