Tomato Avocado Cucumber Walnut Salad

Are you ready for the summer?  Are you ready for the fresh fruit and vegetables that are farm fresh?

      No more of those imported veggies and fruits.  It is time to eat local.  We are talking the ultimate in farm to table cuisine. 

      There is no better way to start off a meal than with a fantastically delicious salad. Check out this tantalizing new Summer Fresh Salad that I just created.  It is packed with anti-oxidants, healthy fats, vitamins and minerals.  Come to think of it skip the main course and have this super charged salad for lunch or dinner.  It is easy to make and will certainly get your taste buds popping.  

My kids and I ate the entire batch of salad in one sitting, paired with meatloaf meatballs.

Ingredients for Tomato Avocado Walnut Salad:

1 lb tomatoes (about 3-4 medium tomatoes)
½ English cucumber
½ medium red onion, thinly sliced
1 avocado, diced
1 Tbsp extra virgin olive oil
Juice of 1 medium lemon (about 2-3 Tbsp)
½ cup California walnuts
1 teaspoon sea salt or salt to taste
⅛ teaspoon black pepper
¼ cup Dill or to garnish

How to Prepare Cucumber Tomato Avocado Walnut Salad:

1. Place chopped tomatoes, sliced cucumber, sliced red onion, diced avocado, and walnuts into a large salad bowl.

2. Drizzle with 2 tablespoon olive oil and 2 tablespoon lemon juice. Toss gently to combine. Just before serving toss with 1 teaspoon sea salt and ⅛ teaspoon black pepper

This salad is great as make ahead for the day option. It can be stored in the refrigerator for 2 days. I noticed that avocado stays fresh because lemon juice prevents avocado from browning. And walnuts remain perfectly crunchy. I love to add walnuts to my salad. It's a delicious and versatile ingredient that is the perfect compliment to this whole food for nutritious, tasty meal. In addition to omega-3 fatty acids, walnuts offer other important components of a healthy diet, including 4 grams of protein and 2 grams of fiber per ounce.
