With Fat Head Low Carb pizza crust being very popular on my blog right now with lots of positive feedback (why lie? It's delicious!), I thought I would make a new recipe out of it with a little fun twist - Fat Heads Low Carb Pizza bites with mini pepperoni.
Scroll down to my video to find out how to make DIY mini pepperoni out of standard sized pepperoni. I can never find mini pepperoni in my supermarkets, but online they are way more expensive. Plus I thought DIY mini pepperoni would be good for other mini food projects.
So Fathead is a brilliant low-carb pizza dough. You can make so many things out of it - rolls, garlic breads, mini bites and crackers. Not only it's quick and easy to make, but it tastes delicious. It doesn't taste low-carb-y or eggy and the crust holds pizza toppings so well, you can keep piling and piling your favorite toppings on top.
Fat Heads low carb pizza bites are great for portion control. You can store them in the refrigerator or freezer. So next time you're ready for a a bite, just pop it into a toaster oven and sprinkle more fresh cheese on top. I'm so glad I have few extras in the fridge right now.
