Air Fryer Caprese grilled cheese with pesto is a delicious and easy way to enjoy a classic grilled cheese sandwich. The air fryer helps to create a crispy and cheesy exterior, while the pesto and tomatoes add a flavorful, fresh, and juicy touch.
Caprese grilled cheese is one of my favorite melts. I love the combination of fresh mozzarella, juicy tomatoes, and fragrant basil, all sandwiched between two slices of crispy bread. The first time I had one was at a small cafe in Italy, and I've been hooked ever since.
For me, there's nothing better than a Caprese grilled cheese sandwich freshly made; warm and crispy straight from my air fryer. The melty cheese, the slightly charred bread, and the warm, juicy tomatoes come together to create a truly delicious experience.
How to Make Air Fryer Caprese Grilled Cheese Sandwich

The key to making a perfect Caprese grilled cheese melt is to use good quality ingredients. Fresh mozzarella is a must, as are ripe tomatoes. I like to use sourdough bread for the sandwich, as it pairs well with the other flavors.
- Preheat your air fryer to 375 degrees Fahrenheit (190 °C). The machine that I use is a Cuisinart Air fryer Oven.
- Assemble – While it is preheating, begin assembling your sandwich by spreading butter on one side of each slice of bread.
- Sprinkle Italian seasoning on the buttered side (Picture 1).
- Season with salt and pepper to taste
- Spread the layer of Pesto on one slice of the unbuttered side (Picture 2).
- Arrange slices of fresh tomatoes and mozzarella on top of the pesto (Picture 3).
- You may choose to add basil leaves in between the slices.
- Place the sandwiches in the air fryer and do not cover the layered toast. You want to air fry it as an “open-face” and give the chance to tomatoes and cheese to caramelize.
- Cook for 3-4 minutes, or until the bread is golden brown and the cheese is melted and slightly bubbly (Picture 4).
- Drizzle with Olive oil and Balsamic glaze if desired
- Press the second half of the toast into the sandwich. Cut the sandwich in half and enjoy!
Caprese Melt Variations
The best tomatoes for this dish are ripe and juicy, such as heirloom or beefsteak varieties.
To complement the sweetness of the tomatoes, choose sharp and flavorful cheese, such as aged cheddar or fresh mozzarella.
For added depth of flavor, try adding a layer of pesto or sun-dried tomatoes.
What to Serve Caprese Grilled Cheese with?
Serving Caprese Grilled Cheese with a simple green salad is always a good option.
You could also try pairing it with roasted vegetables, roasted potatoes, or a side of soup.
If you're looking for something a little heartier, you could serve it with chicken or sausage.
And if you want to keep it light, you could team it up with fruit or a slice of lemon cake.
