Ingredients:
Pumpkin. Look for pumpkins labeled as "Sugar Pumpkin" or "Pie Pumpkin" These pumpkins are best for cooking and roasting. They are sweet and flavorful, with smooth flesh.
3 Tablespoons preferred cooking oil of choice. I use Avocado Oil
1 TBS seasoning veggie blend. The one I use is Mrs. Dash Salt free Seasoning Blend .
Sprinkle with Pink Himalayan Salt to taste
Directions:
Heat the oven to 400°F (Air fryer directions below)
Wash your pumpkin
Cut your pumpkin in half.
Scoop out the flesh and the seeds. You can save the seeds to roasting them later.
Do not remove the skin.
Cut pumpkin into wedges or square cubes, as you see here in the photos.
Rub the pumpkin pieces with oil, seasoning blend, sprinkle with Himalayan salt to taste
Sprinkle the tops with cinnamon
Arrange the baking sheet with parchment paper in the middle of the oven
Arrange pumpkin wedges on the baking sheet.
Roast for 30-40 minutes or until fork tender
Puree (optional): Transfer the pumpkin flesh to a food processor and puree until smooth.
Air Fryer directions:
Preheat the air fryer to 400°F (run it empty for a minute or two)
Wash your pumpkin
Cut your pumpkin in half.
Scoop out the flesh and the seeds. You can save the seeds to roasting them later.
Do not remove the skin.
Cut pumpkin into wedges or square cubes, as you see here in the photos.
Rub the pumpkin pieces with oil, seasoning blend, sprinkle with Himalayan salt to taste
Arrange pumpkin wedges in the air fryer basket or tray. You can line with parchment paper if you like.
Air fry mode 400F/200C 10 minutes, flipping each piece half way (5 minutes per side)
Take out of air fryer, flip one more time, sprinkle the tops with cinnamon
Air fry for an additional 3-5 minutes or until desired golden brown crispy edges.
