Super Delicious French Onion Soup Pressure Cooker Recipe

I’m just learning how to use my new pressure cooker. After I did the Pot Roast in it, it came out so savory and delicious, I became a believer. The next day I found a recipe for French onion soup that could be made in the pressure cooker.  It called for sweet onions, beef broth, French bread, Gruyere cheese and seasoning to taste.  The prep time is about 15 minutes and the cooking time was another 15.  After taking the soup out of the pressure cooker I placed in ceramic bowls (we didn’t have crock pots) covered with cheese and broiled for a couple of minutes.  The end result was a super delicious French onion soup that my family enjoyed immensely.

Ingredients for French Onion Soup:

4.2 qt (serves 4-5)

1tbs Olive oil

4 cups of thinly sliced or diced organic sweet onions

2 garlic cloves, sliced thin

2 tsp dried thyme

1/2 cup of dry sherry

4 cups beef broth

French bread

1/2 cup Gruyere cheese (provolone or mozzarella will do too, or even mixture of these)

Directions:

Heat olive oil in pressure cooker pot over medium heat. Add onions and garlic, cook until soft. Add the thyme, sherry and broth. Season with salt and pepper.

Seal pressure cooker. As soon as the steam starts to release, lower the heat to medium and cook for 8 minutes.

Release pressure, open the cooker – the soup is ready!

Preheat the broiler to high. If not salty enough for you, then season with salt and pepper to your taste.

Ladle the soup into soup bowls safe for the oven. I placed mine into small baking ceramic bowls cuz I don’t have crock pots. Place 2 pieces of bread on top of each plate. Sprinkle with cheese. Place bowls on a baking pan, put in oven and broil until the cheese melts, about 3 minutes.
