Did you know that broccoli contains the highest amount of Glucoraphanin of all cruciferous vegetables, that makes it known as "Superfood", it is also a great source of vitamins K & C, folic acid, potassium, fiber, and other important nutrients? Maybe that is why our mothers always said, “Make sure you finish your broccoli!” I always thought it was a form of torture. Let’s just say I was not the biggest fan of broccoli as a kid.
Now that I’m a parent I actually enjoy broccoli but have difficulty convincing my kids to eat it. So what do you do when your kids are fussy eaters when it comes to vegetables? I’ll tell you what you can do.

You can improvise and create a delicious appetizer that contains broccoli. This appetizer is called “Broccoli Tots”, and they are healthy and simply delicious. The great thing is they sound like tater tots, which is one of my kid’s favorites. Check out this simple, fast, and healthy recipe for broccoli tots that I’m sure you and your family will love.
You can roll these in a "tot shape" or a "patty shape" it doesn't matter, the result is still fantastic. I've seen few other recipes and people suggest to dip them in ketchup or BBQ sauce, which tastes great. My personal suggestion - try them with Dijon mustard. The taste is divine and you seem like you can not stop eating them. But do not worry, they are very light and not heavy at all.
Ingredients
12 ounces broccoli, cut into small florets
¼ cup scallions, thinly sliced
2-3 garlic cloves, finely diced
⅔ cup shredded cheddar cheese (you can sub for mozzarella)
1 egg, beaten
⅔ cup almond meal
Salt & Pepper to taste
Directions:
Preheat oven to 400 F (200 Celsius)
Fill a saucepan with water and bring to a boil. Season with salt. Boil the broccoli for about 2 minutes. Drain and finely chop the cooked broccoli. In a mixing bowl, add broccoli, cheese, scallions, garlic, egg, and almond meal. Mix well by hand and chill in the refrigerator for 20 minutes.
Spray a nonstick baking sheet with nonstick spray. Shape the mixture into tot shapes and spread them evenly on the sheet.

Bake for 10 minutes on one side. Then flip and then bake for an additional 10 minutes on the other side until golden brown and look something like this.
