With so many people on special diets nowadays it is great when I come across a new recipe that is easy, healthy, and can be consumed by mostly everyone. My recipe is gluten-free, lactose-free, high-protein, high-potassium and easy to make.
Now I know what you’re thinking how can pancakes be gluten-free? Well I will share a little secret with you. These pancakes contain no flour of any kind. No baking powder, no added sugar, no yeast, nothing that you would typically associate with pancakes. As a matter of fact these pancakes require only two simple ingredients that I bet you have right now in your kitchen. The ingredients are bananas and eggs. Yep that's it! Just two simple ingredients and you are on your way to making delicious banana pancakes.
Now that you know the ingredients here is how you make them. Take one ripened banana (the more ripe the better) peel it, place it in a glass bowl and mash is up with a fork. Then add 2 eggs to the bowl and stir the mixture together until you have gotten most of the lumps out. But if the mixture is lumpy it is still totally fine!
Note: This recipe will make 8-9 medium sized pancakes. Double the ingredients if you want to make 20-22 pancakes, then you need to use 2 ripened bananas and 4 eggs.
Grease up your skillet or pan and turn on your stovetop to medium heat. Check the heat by sprinkling a couple of drops of water on the pan, if it sizzles it’s hot enough. Pour out your batter into the pan. Each pancake should be about 4" in diameter. If you make them too big they will be difficult to flip. Let cook on each side for 1-2 minutes and they are done. Put them on your plate and feel free to top them off with some butter, maple syrup, jelly, some blueberries, or anything else you fancy. My son likes to mix cinnamon into his egg and banana batter before cooking them up.

Carmen, - Almond meal or almond flour or ground almond is made from ground sweet almonds. Almond flour is usually made with blanched almonds, whereas almond meal can be made both with whole or blanched almonds.

Would I be able to use coconut flour instead of the almond meal or almond flour? I'm on the hcg diet, I'm on phase 3 now and I've lost 37lbs in 5 weeks, so I was just wondering which flour would be better the almond or coconut flour? I'm actually going to try your cloud bread as well. Such awesome recipes thank you for sharing with us.
