  • 1 and ½ cups shredded mozzarella cheese
  • 3 TBS cream cheese
  • 1 egg
  • 1 cup Almond flour
  • 1 tsp baking powder
  • Optional ingredients:1 tsp spices like, dried oregano, basil, garlic powder
  • For topping:Everything but the bagel seasoning or seasoning of your choice
  1. Preheat oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper
  3. Microwave Mozzarella and cream cheese in a bowl until soft, about 40 seconds.
  4. Add egg, Almond flour, remaining ingredients and spices and stir and blend well using spatula into a dough ball.
  5. Optional – you can proceed right away but for best results – let the mixture cool or freeze it for 30 minutes or else the dough may be sticky
  6. Divide the dough into 6 parts. Form an even ball with each piece by rolling with your hands, then press gently with your fingers to make a circle shape on the lined baking sheet.
  7. Sprinkle “Everything but the bagel seasoning” or sesame seeds over the breads and gently press into the dough.
  8. Bake for 12-14 minutes, until the buns are firm and golden.
  9. Serve fresh out of the oven, sliced in half and top with your favorite meats, cheeses, burger or veggies.
1. Leftovers (if any left) can be stored at room temp for 2 days or refrigerated for up to a week
2. Leftovers can be frozen as well – if freezing leftovers, slice the bun ahead of time. When ready to re-heat, place in toaster and toast for 1 minute.
3. If you have a nut allergy, you can substitute for Gluten free baking flour instead or Sunflower seed flour (meal) or CarbQuick baking mix
4. If you don’t have a microwave, melting ingredients on stove top will work too.
